Lazy Saturday Eggs


Now, every now and then, I get this burst of energy early on a Saturday morning. I will get up before my house realizes I am awake. I clean, get my dishes together, mop with my favorite scent and continue to make breakfast from scratch. I will have the full spread of eggs, waffles, pancakes, toast, fruit, juice etc!


But...there are weekends that I pray my kids don't hear me pee so they don't wake up! ( moms know what I'm talking about!)


For these days, I wish my kids were satisfied with just a sugary cereal, but of course, teaching them well means they request an actual breakfast to eat.


As tired as I am some weekends, the guilt I would feel if I made them eat some cereal won't let me rest. I started searching for ways to shorten the time so I can get back in my bed!


One of their favs to eat is eggs. Eggs can overcook and even burn if not careful which would be a double waste for me. So, I saw online a cool way to use cupcake baking pans to cook scrambled eggs in the morning. I saw this and immediately loved it. It is an easy way to portion control as well when you are trying to live your best life. The kids like it and you can customize each "cupcake" or "egg-cake" with whatever you like if you have a family with different tastes! My son likes ham n cheese while my daughter like hotdogs in hers and I like spinach and onions. Whatever you like you can add!


Here is what you need to do:

1) Grab your cupcake pan and heat your oven to 350 degrees. I used one that had 6 but if you have more people in your family, by all means, use the 12. Think 2 egg cakes per person is enough for your daily serving. Spray with your favorite non-stick spray first!

2. Crack an egg for each space you will be baking in a medium-sized bowl and scramble the eggs or crack each egg inside each space and scramble carefully with a fork.

3. Get creative! for the eggs in this shot, we had added a little bit of Goya's Adobo seasoning, cut pieces of ham and topped off with cheddar cheese.

4. Bake in the middle of the rack for 15-20 mins or when a toothpick comes out clean from the center.



While this is happening, the house gets full of kids brushing their teeth, taking the dog out, quick shower, fights over what cartoon to watch and my match tea finishes brewing.


Once the eggs are done, I pop them out, slather our lite syrup on the pancakes and continue to watch The Amazing World of Gumball until my Matcha Tea kicks in and I start my day!
